Chipotle Tomato and Rice Soup

Tomato and rice soup was a comfort food growing up, and I put my own twist on this classic with my Chipotle Tomato and Rice Soup. This soup is smoky, hearty, and just spicy enough without being too spicy. My chipotle tomato and rice soup is done in about 45 minutes and made simpler using Success Boil-in-Bag Rice.

How Spicy is this Chipotle Tomato and Rice Soup?

I took a classic tomato soup and updated it with the smoky, deep flavors of chipotle, paprika, and cumin. You’ll see in this recipe that I use chipotle in adobo as well as chipotle chili pepper. These spices combined with poblano may have you questioning the heat level of this soup.

Poblano peppers are actually pretty low on the Scoville Scale at 1,000 – 2,000 SHU. Chipotle peppers are considered on the low end of hot at 2,500 – 8,000 SHU; comparatively, chipotle peppers are ranked the same level of heat as jalapeno peppers.

If you want to modify this for sensitive palettes, swap the chipotle chili powder for ancho chili powder and use half chipotle in adobo. I don’t use these peppers and spices for heat as much as I use it for that earthy smokiness that pairs well with tomato.

What toppings to serve with Chipotle Tomato and Rice soup

Anything that works with a chili would work here. My personal favorites are cilantro, jalapeno, red onion, avocado, and queso fresco. Cotija cheese or even a basic cheddar cheese would be great here too. Because I like the spice, I don’t tend to serve this with sour cream, but my daughters both had it with theirs. Sour cream is another way to lessen the heat in this soup.

Vegetarian Rice Soup

This soup is vegetarian and vegan! I don’t have many vegetarian dishes on my website, and I have even fewer vegan recipes. As a regular meat eater, this is a filling and satisfying soup that can be a whole meal. I don’t say that lightly. This isn’t a starter course type of soup, but a stick-to-your-ribs hearty soup. The combination of the rice and beans plus all the vegetables really makes this a filling soup that is well rounded with carbohydrates, protein, and fiber.

Do you add cooked rice to soup?

I prefer cooking my rice separately when adding it to soup. Soup often simmers for different times and temperatures which can lead to undercooked rice or mushy overcooked rice. This is another reason why I love Success Boil-in-Bag White Rice. I can time it so the rice is done by the time soup is ready to be served.

Ingredients

  • 1 onion, diced
  • 1 poblano pepper, diced
  • 4 cloves of garlic, minced
  • 3 tablespoons of chipotle in adobo, minced
  • 4 cups vegetable broth
  • 56 oz. crushed tomatoes
  • 30 oz black beans
  • 2 cups frozen corn
  • 1 teaspoon of chipotle chili powder
  • 1 teaspoon of cumin
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of oregano
  • 2 bags of Success Boil-in-Bag White Rice
  • 1 lime, juiced
  • Kosher salt
  • Olive Oil
  • Recommended Toppings: red onion, avocado, queso fresco, jalapeno, cilantro

Instructions

  1. Saute onion, poblano pepper, and a pinch of salt in a stock pot with olive oil. Cook on medium for about 5 minutes, stirring occasionally.
  2. Add chipotle in adobo and garlic. Cook for about 30 seconds, stirring occasionally.
  3. Add tomatoes, vegetable broth, black beans, frozen corn, chipotle chili powder, cumin, smoked paprika, and oregano to the pot. Mix well and simmer for 30 minutes. 
  4. Cook Success Boil-in-Bag White Rice per package instructions so the rice is ready at the end of the 30 minutes the soup is simmering.
  5. Add cooked rice and mix well.
  6. Add lime juice, taste, add more salt if necessary (this depends greatly on the vegetable stock used)  before serving.
