Chipotle chicken thighs are going to be my new go-to all grilling season. These are smoky, juicy, and just enough heat without being too much for my kids. This would be excellent in chicken for chopped salad and a perfect accompaniment to any burrito bowl.
Modeled after the chicken from Chipotle, this is a four ingredient recipe using chipotle in adobo, lime, salt, and oil. These are four ingredients I always have on hand.
Easy 30 minute chicken marinade
This marinade is simple and comes together in less than 5 minutes. Even better, you only need 30 minutes to marinade. Simply combine the adobo, lime, salt, and oil, coat your chicken, and refrigerate for 30 minutes.
You can marinate this chicken for up to 24 hours. I know many of you like to marinate your meat before work/school, so this will totally work. 30 minutes is truly all you’ll need.

Chipotle’s Chicken Recipe – Not Spicy
According to a few Tiktoks I have seen, Chipotle’s recipe is simply a can of chipotle in adobo blended and added to chicken thighs. I tried is and it was delicious but a little too spicy for my daughters. This is a less spicy version my whole family loved.
You’ll see I’m only using the adobo, BUT you can add chopped chipotle peppers for added heat. You know you and/or your family best. This recipe has the smokiness of the chipotle without much of the heat.

Grilled Chipotle Chicken Thighs

Ingredients
- 6 chicken thighs, skinless and boneless
- 1/4 cup chipotle in adobo
- 1 teaspoon kosher salt
- 1 teaspoon olive oil (or preferred oil)
- 1 lime, juiced
Instructions
- Combine adobo, olive oil, kosher salt, and lime in a bowl with chicken thighs. Allow to marinate for 30 minutes.
- Heat grill to 350°F and grill chicken thighs for 10-15 minutes. I usually do mine for about 5 minutes on both sides. The chicken thighs will develop a nice char. Chicken is fully cooked at 165°F.
- Allow to rest for 5 minutes before serving.

Can I make chipotle chicken with chicken breast?
Chipotle’s recipe uses chicken thighs. This can be adapted to use chicken breast but the quantity and cook time will need to be adjusted. This recipe is for (roughly) 1 lb of chicken thighs. For cooking instructions, consult How to Cook Chicken Breast for grill, air fryer, baking, and pan frying.
How long do cooked chicken thighs last?
According to the USDA, cooked chicken thighs last three-four days in the fridge and up to 2-3 months in the freezer if stored properly.
Are chicken thighs healthy? – Weight Watchers Chicken Thighs
